Per weight of meat or vegetables. Weigh the seasoning once: teaspoons are a rough check only.
- For 300g meat/veg
- Use 10g (approx. 1 heaped tablespoon)
- For 500g meat/veg
- Use 15g
- For 1kg meat/veg
- Use 28–30g
Soften a chopped onion in a little oil until golden, then add garlic and ginger. Stir in the blend with a splash of water and fry for a minute, until the oil separates and it smells toasted. Add your meat, fish or vegetables, turn them in the spices, then add chopped tomatoes or stock and simmer until tender. Salt to taste at the end: this blend has no added salt.
A squeeze of lemon at the end sharpens the tamarind.
