Batch guide
Per weight of meat or vegetables. Weigh the seasoning once: teaspoons are a rough check only.
- For 300g meat/veg
- Use 10g (approx. 1 heaped tablespoon)
- For 500g meat/veg
- Use 15g
- For 1kg meat/veg
- Use 28–30g
Brown the meat and a chopped onion in a little oil, stir in the blend and cook for a minute. Add stock and tomatoes, cover and simmer or bake slowly until tender. Salt to taste at the end: this blend has no added salt.
Dip the tortillas in the fat from the top of the broth before frying them crisp.
