Garlic and herbs with a smoky, earthy edge
Sunday potatoes that actually crunch.
Rosemary, thyme and oregano, with a savoury note of fenugreek leaf, cling to the rough edges of a parboiled potato and crisp with the oil as the oven works. Paprika and smoked paprika deepen the outside to a rich amber, while a little sumac keeps the garlic bright rather than sharp.

How to use
Batch guide
Per weight of meat or vegetables. Weigh the seasoning once — teaspoons are a rough check only.
- For 250g meat/veg
- Use 10g (approx. 2 generous teaspoons)
- For 500g meat/veg
- Use 20g
- For 1kg meat/veg
- Use 35–40g
Parboil the potatoes until the edges are fluffy, drain and shake the pan well to rough up the surfaces. Toss generously in oil and this seasoning before going into a very hot oven. The garlic and herbs get into every crevice; the smoked paprika gives the outsides a colour that suggests far more effort than the method requires.
It works across the whole roasting tin — toss in chopped carrots, parsnips, cauliflower or mushrooms with the same oil-and-seasoning treatment. Add sausages and you have a complete one-pan dinner with no additional seasoning.
Pro tip: for jacket potatoes, rub the skin in a little oil and a generous shake of this seasoning before baking at high heat. The skin crisps and seasons simultaneously, and the inside needs nothing except butter.
