Per weight of meat or vegetables. Weigh the seasoning once: teaspoons are a rough check only.
- For 300g meat/veg
- Use 8g (approx. 1 tablespoon)
- For 500g meat/veg
- Use 12g
- For 1kg meat/veg
- Use 22–25g
Rub it all over the meat, fish or vegetables with a little oil. Leave for at least half an hour, or overnight in the fridge, then grill, roast, barbecue or air-fry.
Pat the meat dry, rub generously on all sides and let it sit overnight before a long, slow cook.
